This is a guide to why in-house catering at a Cornwall wedding venue makes a genuine difference to the food, the experience, and the flow of the day, featuring Tredudwell Manor’s in-house chef Glynn Wellington.
Our in-house chef Glynn Wellington creates seasonal menus using local Cornish suppliers including Wings of St Mawes, Quay Bakery Fowey and R.J. Trevarthen. Options include formal plated menus, relaxed sharing feasts, a new buffet menu, and fully vegan and gluten-free menus. Canapés are included as standard.
Choosing a Cornwall wedding venue with a chef who knows the kitchen, the suppliers, and the flow of the day is one of the most significant decisions a couple can make when planning their wedding food.
When couples come to visit us at Tredudwell Manor for the first time, the food conversation usually comes towards the end. By that point they’ve fallen in love with the place – the nature, the sense of escaping the world for a bit. And then, almost as an afterthought, someone asks: “How are we going to feed everyone?”

We have an in-house chef – Glynn Wellington. He grew up in Fowey, he knows every supplier worth knowing in this part of Cornwall, and he’s been cooking for weddings at Tredudwell long enough to know exactly how each day unfolds and what couples and their guests need from the food at every moment.

What Having Your Own Chef Actually Means
Glynn isn’t arriving at Tredudwell on your wedding morning for the first time. He knows the kitchen, the timings of each part of the day, how the service needs to work for 60 guests versus 180. He’s cooked in this space more times than he can count. That familiarity means he can put everything into the food rather than finding his feet in an unfamiliar space.

It also means the conversation about your menu starts early and stays personal. Glynn sits down with couples well ahead of the wedding to talk through not just what food they love, but what kind of atmosphere they want at the table. A long, candlelit sharing feast feels completely different to a structured three-course dinner, and the menu needs to carry that feeling all the way through.

There are no handoffs, no miscommunications, no wondering who’s responsible for what. It all sits with one team who know each other, know the kitchen, and know this venue.

Food That Tastes Like Cornwall
One of the things Glynn is most committed to is sourcing locally. He grew up here, and the relationships he has built with suppliers over the years reflect that deeply.
-
- Seafood comes from Wings of St Mawes
-
- Bread from Quay Bakery in Fowey
-
- Vegetables from Quay Fresh West Country
-
- Meat from R.J. Trevarthen
All excellent businesses run by people Glynn has worked alongside for years, who share the same commitment to quality and provenance.

The result is that the food at a Tredudwell wedding in May tastes different to the food in October. Menus shift with the seasons and with what is actually available and at its best. A wedding in Cornwall, we think, should taste like Cornwall.
One of our favourite recent examples: scallops caught and collected on a Friday evening, served to guests the following day. The couple told us afterwards they had never tasted scallops like it. That freshness is simply not possible when food travels from a distribution centre.
When growing seasons create challenges, Glynn discusses this with couples honestly and adjusts the menu accordingly. The menu you plan together will always reflect what is genuinely at its best.

The Menu Options: From Formal to Relaxed
Part of what makes an in-house chef so valuable is flexibility. Glynn has built menus across a wide range of styles, and the food can be shaped entirely around how you want your wedding to feel.
Sharing feasts are our most popular choice right now. There is something wonderfully generous about platters arriving at the table and guests helping themselves, reaching across, trying things, talking about what they’re eating. Couples often tell us that the sharing style made the room feel more relaxed and sociable from the very first course.

A recent autumn sharing menu included brioche with wild garlic pesto, crispy ham hock with pickled mustard mayo, and grilled Cornish brie with honey as canapés. Sharing starters of deep fried chicken with fennel and pickled cucumber, and scallops in the shell with roast cauliflower. A main of roast porchetta with apple and mustard chutney, alongside potato dauphinoise and winter leaf salad. And for dessert, lemon tart with wild berry compote and chocolate brownie with Cornish clotted cream.
Prices start from £70 per guest for a relaxed sharing feast menu (minimum 50 guests) 3 courses
Formal plated menus work beautifully for couples who want a more structured dining experience. A recent example: heritage tomato salad with burrata and focaccia crisp, or scallops with sweetcorn purée and bacon crumb to start. Fillet of Cornish cod with buttered pomme purée and samphire, or prime beef fillet with crisp potato rosti and port jus for main. Vanilla mousse with honeycomb or chocolate tart with local raspberries to finish.[/caption]
Prices start from £68 per guest including canapes (minimum 60 guests) for 2 courses and £78 per guest for 3 courses
Our new buffet menu offers a more informal alternative, and it has become increasingly popular with couples who want the wedding breakfast to feel relaxed and easy. Guests serve themselves, move around, and the room stays animated. It is a good fit for couples who want high-quality food without the formality of a plated service, and it works particularly well for larger guest numbers.

Guests who weren’t vegan asked for seconds!
Canapés – a delicious surprise for your guests
One thing that often surprises couples is that canapés at Tredudwell are included as standard. It is more unusual than you might expect at a venue of this size, and it matters more than people realise.
Canapés during the drinks reception are the first food guests taste on your wedding day. They set the tone for everything that follows. Having them handled by the same chef who is cooking the rest of the day means they feel like part of the same meal rather than an afterthought.
A few recent canapé examples: mini ham hock terrine, smoked salmon with soft cheese, panzanella tartlets. Or from a more rustic menu: brioche with grilled Cornish brie and honey, and crispy ham hock with pickled mustard mayo.
The Evening and Beyond[/caption]
The food doesn’t stop with the wedding breakfast. Evening food is available through Glynn’s team, from Cornish pasties to more elaborate late-night spreads, and many couples choose something relaxed and generous for the evening, something that keeps the energy going without feeling too formal.
For couples planning a weekend wedding, the food conversation extends further still. Breakfasts in the manor house the next morning, perhaps a relaxed brunch or barbecue on the Sunday. Glynn and the team are happy to discuss what the whole weekend could look like.

Planning Your Wedding Menu with Glynn
The menu planning process happens in stages. For plated menus, Glynn meets with couples around eight months before the wedding. For sharing menus, around six months ahead. This gives couples time to gather dietary requirements from guests and bring them to the conversation.

The WhatsApp group we use for planning makes it easy to ask quick questions as they come up, and Glynn is always happy to discuss ideas, adapt dishes, or incorporate something personal. A recent couple wanted to honour the groom’s Colombian heritage in the evening food. Glynn learned to make arepas filled with melted cheese, topped with butter and salt. Guests were delighted.
What to Look For in a Wedding Venue with a Chef
If you are weighing up venues and thinking about catering, here are a few questions worth asking:
-
- Is the chef in-house or external?
-
- How familiar is the chef with this specific kitchen and this specific venue?
-
- Where does the food come from, and how does the menu change with the seasons?
-
- Can the menu be genuinely personalised, or is it a set package?
-
- How are dietary requirements collected and handled?
The answers tell you a great deal about how the food will feel on the day.
At Tredudwell, we think the food at your wedding should feel like a celebration of where you are and what you love, cooked by someone who cares about both. That is what having an in-house chef who knows Cornwall actually means in practice.

We’d love to talk to you about your menu ideas. Get in touch to arrange a viewing!

FAQ
What does it mean to have an in-house chef at a wedding venue in Cornwall?
Having an in-house chef means the person cooking your wedding food knows the venue, the kitchen, and the flow of the day intimately. At Tredudwell Manor, chef Glynn Wellington has catered many weddings at the venue and works directly with couples from the planning stages through to the day itself. There are no handoffs between venue and external caterer, and the food is shaped entirely around how the couple wants the day to feel.
What wedding catering options are available at Tredudwell Manor?
Tredudwell Manor offers formal plated menus, relaxed sharing feasts, an informal buffet menu, and fully bespoke vegan and gluten-free menus. Canapés are included as standard. Evening food is also available and for weekend weddings the team can cater from pre wedding event and post wedding event gatherings
Does Tredudwell Manor use local Cornish suppliers for wedding food?
Yes. Chef Glynn Wellington sources from local Cornish suppliers wherever possible, including Wings of St Mawes for seafood, Quay Bakery in Fowey for bread, Quay Fresh West Country for vegetables, and R.J. Trevarthen for meat. Menus are built around what is in season and at its best, which means the food changes genuinely across the year.
Can Tredudwell cater for vegan and gluten-free weddings?
Yes. Glynn Wellington has designed fully vegan and gluten-free wedding menus that are as creative and generous as any other option on offer. Dietary requirements are discussed in a planning meeting ahead of the wedding and managed carefully across every element of the day.
What is the difference between a sharing feast and a plated menu for a wedding?
A sharing feast involves platters of food arriving at the table for guests to help themselves to, creating a relaxed, sociable atmosphere. A plated menu is a more formal, structured dining experience with individual courses served to each guest. Both are available at Tredudwell and can be tailored entirely to the couple’s preferences. Glynn is happy to discuss which style would suit your day best.
